INTRODUCTION: The Importance of Maintaining a Healthy Microbiome: Sequencing the human genome revealed that humans have approximately 23,000 genes. This is far fewer than the number of genes that scientists expected to find and it created a puzzle that scientists called The Genome Complexity Conundrum.

Here’s the conundrum. Humans have about 23,000 genes, but the common rice plant (Oryza sativa) contains about 45,000 genes. How is it that we have only 23,000 genes when a simple organism like the common rice plant has nearly twice as many genes (45,000) as humans? The answer lies within your microbiome.

100 Trillion Bacteria: The human gastrointestinal tract contains an estimated 100 trillion bacteria--that’s 100 followed by 12 zeros: 100,000,000,000,000! Some estimates suggest that there are 10x more bacteria than human cells in the body. Yes, you may be only 10% human. The Human Microbiome Project (2008-2012) resulted in an enormous acceleration of research into the microbiome and the function and importance of probiotic bacteria. While your human DNA (one copy from each of your parents) contains about 23,000 genes, your probiotic bacteria contain an estimated 3.3 million unique genes.

99% Of Your DNA is Bacterial: Genes are comprised of sequences of DNA, which contain the instructions for virtually everything that is made or transpires in the body. Every protein, every enzyme, every neurotransmitter…every cell in your body created in response to a DNA-gene messages. One of the most amazing recent discoveries is the fact that over 99% of the DNA in your body is the DNA of your bacteria.

The fact that over 99% of the DNA in the body is the DNA of your bacteria, and our growing realization of how intimately involved our gut bacteria are in regulating our health, helps to emphasize how important it is for people to learn how to create and maintain a healthy microbiome.


It is important for people to understand the following four topics, which are critical factors for the creation and maintenance of a healthy microbiome and a healthy, well-functioning gastrointestinal tract.

1. DIVERSITY: Greater diversity means a large number of different strains of probiotic bacteria in the GI tract. Dr. Ohhira was one of the first scientists to understand that a multi-strain probiotic product would likely provide more benefits compared to a product that contained only one or several strains. Dr. Ohhira utilized twelve synergistic strains of probiotic bacteria to initiate the production of Dr. Ohhira’s Probiotics®, utilizing the process of natural fermentation.

Dr. Ohhira’s fermentation process begins with twelve unique strains of probiotic bacteria. Then, at seasonally appropriate times throughout the year, a wide range of organically grown fiber-rich foods are harvested, shredded and added to the fermentation vats. How to Save Time Making Salads: Ross’ Salad Buzz YouTube Video

One of the most important requirements for the creation and maintenance of a healthy microbiome is the following: You MUST feed you probiotic bacteria well, or they will not thrive and survive. The type of “food” that probiotic bacteria require are the non-digestible fibers that are primarily found in multi-colored vegetables. Eating a wider range of different kinds of fiber-rich veggies will support the growth of a wider range of probiotic bacteria. Greater diversity = a healthier microbiome and a healthier you.

A salad with leafy greens and a variety of multi-colored vegetables is the best way to feed your microbiome. However, making salads is time consuming which is a major reason why many people don’t eat salads regularly.

Once a week I buy all my organically grown veggies. I wash them in a weak solution of hydrogen peroxide and then process them. I use our Cuisinart food processor to do much of the work, but you can easily cut the veggies up by hand if you don’t have a food processor. A couple items like a red pepper and a batch of parsley I cut or chop by hand. I toss all the cut, chopped & processed veggies together in my largest kitchen bowl.

Here’s the secret: After all the veggies have been processed, squeeze a whole medium sized lemon and pour the lemon juice over the processed veggies. Use a pair of salad tongs to toss everything well so that the lemon juice is well mixed into the buzz mix. The vitamin C in the lemon juice is an antioxidant that protects the processed veggies from spoiling. After mixing in the lemon juice, I transfer the buzz to a large Tupperware container and store it in the refrigerator. It stays fresh for about a week.

Most evenings my wife and I have a large salad as our main meal of the day. We try to feed our microbiome well every day. With the salad buzz already prepared, fixing a salad just takes a couple minutes. I take the container with the buzz out of the refrigerator along with a bag of lettuce and a container of sprouts. A handful of lettuce, a pinch of sprouts and a big scoop of salad buzz. Presto, you’ve got your salad made. We add some wild caught salmon or some beans, seeds & nuts for protein.
